A Derry Cafe with a Story…

Sinnsro stemmed from owner Kimberley’s love for trying new coffee shops, specialty coffees and the treats that they had on offer. Being so passionate about coffee culture Kimberley introduced me (Eamonn) her partner to coffee and at the start, i’ll admit, I didn’t enjoy any sort of coffee but skip forward to present time I have consumed more coffee in the first week of Sinnsro launching than I have had in months.

Starting Point 

Kim has always loved coffee and working in coffee shops but myself I never started loving coffee until we travelled Asia but more specifically it was when we visited Vietnam – the iced vietnamese coffee was so tasty, borderline addictive. 

After spending a few weeks in Vietnam in July of 2022 my love for coffee was starting to kick in, we then went back to Thailand after a few weeks in Malaysia.

Thailand felt like our home from home and our love for visiting coffee shops in new destinations grew. We enjoyed trying the different drinks on offer and planning on how to bring them to our dream coffee shop.

Once returning from travelling Asia the first time we both worked hard to return and continue seeing new destinations, once we got going we started putting the plan into place with our free time and researching the local market. 

When in Korea we were full steam ahead working on the business plan everyday and brainstorming in cafes of ways to make our cafe in Derry unique. 

We loved going to a Jazz bar in Seoul and realised this is the calming music and vibe that we wanted in our cafe, as we all know by now the Derry Jazz Festival is massive for Derry’s economy and nightlife scene. 

Yet, we want to provide people with a place that they can enjoy Jazz all year round in our Derry Coffee shop. Jazz might not be everyone’s cup of tea but it creates a relaxing atmosphere that will help you escape the outside noise. 

Our Speciality Coffee & Tea

Thai Tea

When travelling and living in Thailand we tasted Thai Tea, a local sweet tea with foamed milk on top. It really tastes as good as it sounds, a lovely treat when you fancy an iced drink or decide against coffee.

The Thai Tea that we serve in Sinnsro is the authentic tea leaves that are used across Thailand. 

We have the Tea leaves imported from Thailand and follow the brewing process the original way so that we can serve up Thai Tea the way locals in Thailand have it.

We have spent a lot of time in the country travelling around different destinations and often settling in one place for a few months but Pai has our heart and this is where we had the first conversation about opening Sinnsro many years ago.

The laid back nature of Thailand and the drive of the people to do everything possible to help you is what we aim to bring to our cafe in Derry.

We truly have the Thai people, our close friends Mew and Care that live in Pai and the community to thank for showing us to just go for it. We watched them make their dreams possible with drive and determination and we thought, why not do the same!

Vietnamese Coffee 

As mentioned before, Vietnamese Coffee is one of our greatest discoveries. Well at least it’s mine as it is what got me into coffee in the first place and it just tastes sooooo good, that is why we had to bring it to our Derry coffee shop. 

Coffee in Derry is on the rise and we are proud to be able to offer some unique specialty coffees and teas that we have sampled around Asia. 

Visiting Ho Chi Minh City was such a great experience, we didn’t know what to expect as it was just our third Asian country we visited after Thailand and Cambodia, but we were blown away by the coffee culture and the array of coffee shop aesthetics. 

From modern industrial coffee shops to old fashioned retro ones and everything in between. 

Our favourite cafe of the lot in Ho Chi MInh City was PERCE%T Coffee, it served up some of the best iced coffees you will taste anywhere in the world.

This is where our inspiration for having Vietnamese coffee on the menu came from, we hope to do the specialty coffee justice so that anyone drinking it can have the authentic taste of Vietnam.

Matcha 

Our most recent venture took us to Tokyo, Japan and it was even better than we could have ever imagined. 

The city, the landscape, the people and the food and drinks were all absolutely fantastic. Whilst in Tokyo we took part in a Matcha making class to learn the authentic steps to serving up Matcha so that we could do it justice in our cafe in Derry. 

At Sinnsro Cafe Derry we use the authentic method of preparing the matcha as well as the best matcha on the market, organic, ceremonial grade matcha powder from Uji, Japan.

At our Derry coffee shop we provide Matcha Iced or Hot with an array of flavours that can be added if they take your fancy. The most popular to date is the Iced Strawberry Matcha Latte, it has quickly become a fan favourite at Sinnsro Derry. 

The benefits of matcha don’t end with its unique taste, matcha has great health properties that have been studied.

Its studies have discovered a variety of benefits showing that it can help  promote heart health, protect the liver, boost brain function and even aid in weight loss.

We are the only independent late night coffee shop in Derry, serving matcha and other drinks from early in the morning until late in the evening.

Croffles

Although this isn’t a tea or coffee it deserves an honourable mention, we discovered Croffles when we visited South Korea. Croffles are a famous treat there, served up by lots of coffee and dessert shops. We knew right away when we tried it that we had to bring them to our menu at Sinnsro. 

The Croffle has been a huge success in the first week of launching and we are proud to be the original home of the Croffle in Derry. We serve up an array of flavours, be sure to come in and check them out in our Derry coffee shop. 

Korea also has a huge coffee culture with what seemed to be a coffee shop on almost every street in the country, heaven!

In the 10 weeks we spent in Korea we visited a coffee shop everyday and there was so much to choose from, we soon realised that people in Korea love to socialise with a coffee. 

The coffee shops were open until very late at night, if not 24 hours, which we loved being able to go out on cold evenings and cosy up with a coffee no matter the time.

The late opening times have inspired our opening times, we hope more and more people will start to socialise over a late night coffee Derry, swapping out a pint for a coffee every now and then.

Launching Sinnsro Cafe in Derry

When in the planning phase of Sinnsro we knew that the people of Derry would be welcoming and supportive of a new independent business. 

As a Derry man myself I had hoped for some support but I am blown away by the kindness and friendliness of everyone who has come through the door and of those who have shared our social media content! 

We spent almost 2 months getting the Derry coffee shop set up doing almost everything ourselves which turned out to be much more difficult than we had imagined.

Our beans are roasted in Kim’s home city Liverpool by Bean, her favourite bean blend so she had to bring it with her to Derry!

We hope to grow the Sinnsro brand into much more, so keep your eyes peeled and be sure to join in the journey.
